Cheddar Broccoli Chicken
So I’m pretty excited about this post, for a lot of reasons.
First and foremost it’s my own recipe! This is pretty big guys. For years I have looked at recipes and followed recipes, in awe of the people who come up with them. How many times did they make one dish and serve it to their families, (I did this one a couple of times) how did attempts one and two taste? There is a lot of trial and error to get those wonderful, tasty recipes. I’m not the kind of person who likes to make something and have it flop. Not realistic, I know. And the pictures, the scrumdeliumptious pictures that make you want to make that dish or bake that cake. Food blogging, from my perspective, is not for the faint of heart. Hats off to food bloggers.
Stay In Your Lane?
I’m also excited about this recipe because it’s something I didn’t think I could do. For reasons mentioned above. I never tried, I just assumed it wasn’t in my wheelhouse. Now that I think about it I don’t really know why. I have been cooking for my family for 12 years. In that 12 years, I have picked up a thing or two. I know my way around a kitchen and I understand more than the basic concepts of cooking. I think, when it comes to food, I’m a follower, not a leader. But this weekend that all changed, I went for it, I tried, and to my surprise, it worked!
Not only did it work it was a rousing success. My kids asked for thirds. Thirds guys! That was huge. Any parent of 7 and 10-year-olds will tell you, that is a feat!
The point is that I would never have known if I didn’t at least try. I did, and now I’m pretty proud of myself. I’m not saying I’m going to completely switch gears and become a food blogger, But I did something I didn’t think I was even capable of.
I stepped out of my comfort zone and so glad I did.
Cheddar Broccoli Chicken
- 2 Boneless Skinless Chicken Breasts
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp olive oil
Cheddar Broccoli Topping
- 1 1/2 cup Broccoli (cut into small florets)
- 1 1/2 cup shredded cheddar jack cheese
- 1 1/2 tsp minced garlic
- salt and pepper to taste
Preheat oven to 350 degrees, preheat skillet to medium-high heat.
In a separate bowl, mix cheese, minced garlic, salt, and pepper, add broccoli florets last. Set aside.
Slice chicken breast down the middle to get uniform thinner breast fillets
Season chicken breast pieces with salt, pepper, garlic powder and paprika
In a large skillet add olive oil and cook chicken on medium-high heat for 1-2 minutes, until brown. Do not cook through.
Transfer chicken to an oven safe baking dish and continue to bake for 13 minutes.
Once chicken is cooked through remove pan from oven, switch oven to Broil
Layer cheddar broccoli mixture on chicken.
Return chicken to oven for 2-3 minutes. Just until cheese is nice and melty.
